Is a 2-bay NAS enough for Plex?
For a household library, yes, if the CPU has Quick Sync. The DXP2800, DS225+ and TS-264 do; the DH2300, DS223, DS223j and TS-233 do not and should direct-play only.
Can I add drives later to a 2-bay NAS?
Not beyond two bays. You can replace both drives with larger ones one at a time and expand the mirror, which is why buying the largest drives you can afford now is usually cheaper.
